Is my mouse bored?
My mouse chews on so many things, and I was wondering if he was just a big chewer, or if its a sign of boredom, like bar chewing is. He'll chew on hammocks, Velcro, suction cups, but surprisingly not any of his plastic hides. He will also try to chew on scabs, and fingernails...which is gross, and I'm trying to get him out of the habit... but does trying to chew on scabs or things like that mean he's craving more protein in his diet?

Chewing is part of how mice have fun. Destroying their toys is their way of playing. As long as your cage has enough things to do, it's a good sign if anything!
If you're worried about it though, make some DIY cardboard/tube toys and maybe invest in some freeze dried insects to supplement with.
Signs of boredom include obsessive scratching, trying to escape the cage, excessive sleeping, etc.

Hi! While it's try rodents like to chew. You might want to see if your mouse has ample spacing. Can you describe your cage set up?

Mice are very often pretty big chewers. But it can’t hurt to take another look at your set up, change things up, give them more to do, more play time, etc.
