One of our female mice has suddenly looking unwell. She was fine yesterday and now this morning she has a hunched back, squint eyes, not wanting to move a lot. For now we have prepared her in a 5G away from her cage mates that are perfectly fine. She even bit us while trying to get her out to clean her cage. I also have some food I'm preparing for her, which is oxbow adult rat food garden select soaked in pedialyte.
She does not have a wet bottom.

Any idea on what it could be? She hadn't eaten anything different yesterday, we did give them some greens 4 days ago, a small amount of romaine lettuce greens with very little purple cabbage.

There could be a lot going on, really; it'd be difficult to tell without being there in person. I'd definitely schedule an appointment with your vet if you haven't already.

For now, I'd be sure she has plenty of bedding so she can stay warm. It may also be worth it to lay a heating mat under part of the tank to help with this, too. Pedialyte was a good call so she stays hydrated, but be sure she also has some chews in there as soaking the pellets removes the tooth wear mice get from it.

Out of curiosity, how old is she? Is she a pet shop mouse?

Just to be on the safe side, remove the cabbage from her greens.  Members of the cabbage family have relatively high amounts of oxalic acid, which can react biochemically to create stones in the urinary system.  Spinach is also guilty of that.

Not that stones are the problem here, but in case they are you will be helping by not creating a condition for more of them to form.

If your sick mousie was a goat, I'd have a suggestion what to add to the feeding program to try to dissolve stones.  But since we are not sure that stones are the problem, and since your mousie is not a goat, I will just reiterate that you should get this problem to the veterinarian without delay.  Your description indicates that she is in pain.
